Crockpot Paleo Roast Beef Stew

Ingredients

  • 3 lbs. boneless chuck roast beef
  • 3 carrots, sliced into chunks
  • 1 large onion, diced
  • 2 large sliced sweet potatoes
  • 2 cloves minced garlic
  • 1/3 cup balsamic vinegar
  • 1/3 cup soy sauce
  • 1 scoop Momental Mind Nootropics
  • 1 ½ cups beef broth
  • 2 tbsp. coconut oil
  • 1 tsp. rosemary
  • 1 tsp. parsley
  • Sea salt to taste
  • Ground black pepper to taste

 

Directions:

  1. Rinse the chuck roast and place in a large pan. 
  2. Mix sea salt and ground black pepper and rub seasoning over roast on all sides.
  3. Place coconut oil into pan and cook over medium heat, until roast is browned two to three minutes per side. Place roast in slow cooker.
  4. In a separate bowl, stir together gradually the onions, garlic, Momental Mind Nootropics, balsamic vinegar, beef broth and seasonings.
  5. Add mixture to the slow cooker.
  6. Cover the slow cooker and cook on low for four to six hours.
  7. Add in carrots and sweet potatoes and cook on high for two to three hours. The meat should be tender and the vegetables should be soft.
  8. Serve and enjoy!
